When the fridge is almost empty and I still need to feed everyone, I make this cheesy ground beef and potato bake. I first tried it because the video on YouTube had about 9.6 million views, more than any other hamburger meat video I came across. It went from a one-time try to a weeknight dinner I make again and again. Kids eat it, little ones too.

The bake uses things most kitchens already have. Potatoes with paprika roast in one baking dish, then ground beef and onion cooked with tomato passata go right on top. Passata is smooth tomato sauce sold in a jar. Lots of mozzarella melts over that and browns in the oven. One dish and one pan, about 40 minutes. The beef and tomato part also makes a good topping for chili cheese fries.

Crispy Ground Beef Stuffed Tortilla

A crispy ground beef stuffed tortilla is seasoned beef and mozzarella folded inside two tortillas and fried until crisp. I gave it a go because the comments under the video on YouTube kept saying how easy it is. It is easy, but it is not fast. With all the chopping, plan on 30 to 40 minutes. One stuffed tortilla feeds one person and uses about 7 oz of beef, so a pound makes about two.

For the filling, the beef cooks with onion, garlic and paprika. One tortilla gets trimmed into a smaller circle, and the scraps go into the meat, so nothing is thrown out. The stuffed tortilla fries in a pan until crisp on both sides. Folding the tortilla in half twice before cutting makes the small circle quick and even. For taco night I put cumin and chili powder in the beef, or I use taco seasoning and sharp cheddar with the mozzarella.

Ground Beef Bulgogi

Ground beef bulgogi gives you the sweet and salty taste of Korean bulgogi without slicing any steak. I tried it because lots of people who left a comment under the video on YouTube said they had made it and their families ask for it again, some every week. It became a regular at my house too, and I always add a fried egg on top. I serve it over rice, and it all cooks in one pan.

The beef browns with ten cloves of garlic and an onion, then cooks in soy sauce, mirin and sugar until the sauce is thick and shiny. Mirin is a sweet rice wine for cooking. Green onion, sesame seeds and sesame oil go on at the end. Most kitchens do not have plum extract, which is a sweet plum syrup. The list below uses apricot jam instead. Honey or hoisin work too, and the dish is still good without any. If you have no mirin, rice vinegar and a little sugar work fine.

French Onion Ground Beef and Rice

At my table, the big pan of French onion ground beef and rice is the one that comes back empty. I made it because the comments under the video on YouTube are full of families who finished the whole pan, and now mine does too. The dish feeds a crowd: about 45 minutes in one pan with almost 2 lb of beef, enough for a family of five. Someone always asks for seconds.

Onions cook slowly until soft and brown, then the beef browns and the raw rice cooks right in the same pan with beef broth and a can of French onion soup. Cheese gets stirred in at the end until melted. The broth and the canned soup are already salty, so I do not add more salt. Mushrooms or carrots work in place of the peas. If you have a packet of onion soup mix instead of the can of soup, use it with a little more broth.

Low Carb Cheesy Ground Beef and Cabbage Skillet

I wanted one low carb dinner I could count on, and this cheesy ground beef and cabbage skillet is it: chopped cabbage takes the place of rice or pasta. It tastes like cabbage rolls without any rolling. The beef and a tomato sauce cook in one big pan, the cabbage softens right in the sauce, and mozzarella melts on top, all in about 35 minutes. A picky teenager eats it, and so does the person in my house cutting carbs. It is just as good the next day.

Two things make this skillet better for me. I let the beef brown in one flat piece before I break it up, because it browns better that way. I also toss the cabbage with a little oil and the spices before it goes in, so every bite gets the seasoning. The sauce is fire-roasted diced tomatoes and a little tomato paste. Parsley and chili flakes on top are up to you. Add the flakes if you like heat.

These are the questions I had when I started cooking more with hamburger meat.

How Do I Store and Freeze Hamburger Meat?

Cooked dishes keep about 3 to 4 days in the fridge if they go in within 2 hours. Frozen, they stay at their best for about 4 months. Reheat leftovers to 165 F. Raw hamburger meat keeps 1 to 2 days in the fridge, or freeze it right away. Frozen raw beef is best used within about 4 months.

Can I Use Ground Turkey Instead?

People who made the bulgogi say turkey, pork or chicken all work in it. For the other recipes, I go by my own habit. Leaner meat browns less, so it can use a little more oil or seasoning to make up for the missing fat.

How Can I Make One Pound Go Further?

If you only have a pound, make half of the French onion rice and use one big onion instead of two. People who made it that way say it works. Potatoes, cabbage and rice all make the beef go further. The potato bake and the cabbage skillet each use about a pound of beef, and the potatoes or the cabbage stretch it.

Is Hamburger Meat the Same as Ground Beef?

Almost. Hamburger may have beef fat added, ground beef may not, and both can be at most 30 percent fat. On how much fat to buy, I go by feel. I like about 80/20 for saucy, cheesy dishes. When the fat stays in the pan and cooks the onions and spices, I pick leaner.

Should I Drain the Fat?

Draining is my own habit, not a rule. I drain when the dish adds broth or a can of soup and the extra fat would float on top. I keep a little fat when it can cook the onions and spices. Medium heat also helps. It keeps the meat juicier and pushes out less fat and juice.
