Olive Garden Alfredo Sauce Copycat

A copycat of Olive Garden's Alfredo sauce with a few extra ingredients for a creamy pasta at home.

Ingredients
  

For the sauce:
  • 6 Tablespoons butter
  • 1 Tablespoon minced garlic
  • 2 Tablespoons all-purpose flour
  • 1.5 cups heavy cream
  • 1.5 cups milk
  • ½ cup Parmesan cheese grated and at room temperature
  • ½ cup Romano cheese grated and at room temperature
  • 1/4 tsp white ground pepper
  • Salt and black pepper to taste
  • Optional: Parsley for topping
For the pasta:
  • 1 lb. Fettuccine or angel hair pasta
  • 8 cups water

Method
 

  1. Bring 8 cups water to a boil in a large pot, then add pasta and cook until al dente.
  2. In a large sauce pan, warm butter over medium heat.
  3. Stir garlic into melted butter and let simmer until fragrant (about a minute or two).
  4. Add flour, white pepper, milk, and heavy cream a little at a time and stir until smooth.
  5. Once the sauce has started to bubble, turn the heat down to low.
  6. Add Romano and parmesan and stir continuously until melted.
  7. Once the sauce has thickened, add drained noodles to the sauce and stir together until fettuccine is thoroughly coated.
  8. Add salt, pepper, and parsley and serve!

Notes

  • Pro tip: to prevent water from boiling over, add half a tablespoon of olive oil to the water. It works wonders!
  • This recipe is great with grilled chicken, salmon, or shrimp!
  • To have a saucier pasta, reduce the amount of noodles you use, or multiply the recipe by one half.
