Qdoba just announced the nationwide launch of the new Mexican Cauliflower Mash, just in time for the New Year. After testing the low-carb option in select markets like Indianapolis, Indiana, the restaurant franchise has decided to add it to the permanent menu as a keto alternative to sour traditional rice. The Mexican Cauliflower Mash is a combination of fresh, roasted cauliflower, sour cream, fresh cilantro and pico de gallo.
During the initial testing process, Qdoba was also looking into the option of offering cauliflower rice.
Katy Velazquez, Executive Chef at Qdoba stated, “We decided to launch the Mexican Cauliflower Mash instead of a cauliflower rice as it is a more innovative option and delivers an enhanced flavor experience for our guests.” She continued, “Oven-roasting fresh cauliflower in-house daily creates caramelized notes, savory flavors and great texture.”
Each serving of Mexican Cauliflower Mash (4.5 ounces) is just 6 grams carbs, making it the perfect low-carb option for anyone following a ketogenic diet. The mash can be ordered with all the main dishes on Qdoba’s menu, including burritos and bowls. The franchise is also launching a new entree featuring the cauliflower mash called the Cauli-Mash Low-Carb Chicken Bowl. This features the mash with grilled adobo chicken, fajita veggies, and additional toppings of your choice.
