KFC Biscuits are among my favorites – flaky, lightly golden pieces of heaven. They can be enjoyed with chicken, mashed potatoes, and gravy. Or they can accompany a full hardy breakfast with eggs and bacon. I’ve even eaten them as a midday (or midnight!) snack. But sometimes, when the craving strikes, the last thing I want to do is get in the car and drive to the nearest KFC, so this Copycat KFC Biscuit recipe comes in handy. It calls for simple ingredients that I always have around the house, and it only takes a few minutes to prepare and bake. Low in calories and homemade from scratch – does it get much better than that?
The trick with this recipe is to use slightly chilled dough. If you place the flour, butter, and milk in the freezer while you prepare your workspace, the dough will be easier to work with when you roll it out. KFC biscuits are round, but you can get creative and use cookie cutters of different shapes. Be sure not to over-bake them. You’ll want them lightly golden, soft, and flaky – about eight to 12 minutes is long enough. Once they’re finished baking, lightly brush the tops with melted butter and serve them warm. You can store them in an airtight container the refrigerator if you don’t finish them all, but mine are always gone the same day I bake them.
Copycat KFC Biscuits
Ingredients
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 2 tsp white granulated sugar
- 1/2 tsp cream of tartar
- 1/2 tsp salt
- 1/2 cup chilled butter salted
- 2/3 cup milk
Instructions
- First, preheat the oven to 415° and line a baking sheet with parchment paper.
- In a medium mixing bowl, sift together the flour, baking powder, sugar, cream of tartar, and salt.
- Using a pastry blender or your hands, cut in the butter until the flour resembles coarse crumbs. Then add the milk and stir with a fork until the mixture comes together.
- On a lightly floured surface, pull out the dough and knead until it's smooth.
- Divide the dough in half, and roll out the first half until it's about ½ inch thick. Cut circles from the dough using a cookie cutter, and arrange them on the prepared baking sheet. With the remaining dough, reform and roll out to ½ inch and repeat until all the dough is used. Repeat this process with the other half of the dough too.
- Bake the biscuits for 10-12 minutes, or until risen and a golden brown.
- Remove from the oven and brush the tops with melted butter. Serve warm and enjoy.
Notes
- For best results, be sure that the dough is cold when you're ready to work with it. Simply place the flour, butter, and milk in the freezer while you gather the other ingredients and prepare your workspace. You don't want anything frozen- just lightly chilled.
